Ingredients
Liquid sugar is an aqueous solution of beet sugar and contains at least 62 % dry matter. The content of invert sugar (fructose/glucose in a ratio of 0.9 : 1) is a maximum of 3 % by weight of the dry matter. In liquid sugar, the sucrose content is usually a maximum of 66.6 %. This is due to the solubility of sucrose. The saturation limit for sucrose depends on the temperature. It increases at higher temperatures. For example, the saturation limit is 64.5 % at 0 °C, 66.6 % at 20 °C (specific gravity=1.32 in each case) and 78.7 % at 80 °C (specific gravity=1.38). The viscosity of the solution decreases considerably with increasing temperatures. The viscosity value is 680 mPs at=0 °C, 230 mPs at 20 °C and only 88 mPs at 80 °C
. Invert liquid sugar is an aqueous solution of partially inverted sucrose. Invert liquid sugar contains at least 70% dry matter. The content of invert sugar (fructose/glucose in a ratio of 0.9 : 1) is more than 3% by weight of the dry matter, but not more than 49%. The solubility of the sugar in water increases up to a mixing ratio of sucrose to invert sugar of 50:50. The maximum solubility for 49% invert sugar at room temperature is around 75%.
